Buffalo Chicken Mac and Cheese Ingredients

  • 16 oz. box of elbow macaroni
  • 1 lb. cooked, chopped chicken
  • 1/4 cup buffalo hot sauce (more for a spicier dish)
  • 2 slices of bread OR chopped up croutons
  • 2 jars of Ragu cheddar cheese sauce OR 1 lb. of Velveeta block cheese & 2/3 cup of milk
  • chopped green onions
  • bleu cheese crumbles

Buffalo Chicken Mac and Cheese

Step 1: Cook the Macaroni

Boil water and cook macaroni according to the box, and then drain the water.

 

Step 2: Toast the Bread

While the macaroni is cooking, crumble up your bread slices and toast them.

I toast mine in the oven at 400°F, but you could also try toasting them in a toaster or toaster oven.

 

Step 3: Add the Cheese

We typically use 2 jars of Ragu cheese sauce, but you can also use Velveeta block cheese if you can’t purchase the jar cheese.

If you use Velveeta, you will also need to add 2/3 cup of milk.

The macaroni will be hot enough that you can just add the cheese to it. You don’t have to heat it anymore after that.

 

Step 4: Add the Chicken

Stir in cooked, chopped chicken that is warm.

You can just microwave pre-cooked chicken to get it warm.

If you don’t have pre-cooked chicken, then you will have to cook the chicken. I like buying frozen pre-cooked diced chicken because it is quicker and easier to use.

 

Step 5: Add the Buffalo Sauce

Add in your 1/4 cup of buffalo hot sauce. If you want it spicier, you can add even more.

Usually I just add 1/4 cup and then let other people add more buffalo sauce to their bowls if they want it spicier.

 

Step 6: Add Toppings

Top with the toasted bread crumbs, bleu cheese crumbles, and chopped green onions. You can add other toppings if you choose such as fresh, diced tomatoes or bacon crumbles.

  • 1/4 cup buffalo hot sauce (or more for a spicier dish)

Instructions
 

  • Boil water and cook macaroni according to the box, and then drain the water.
  • While the macaroni is cooking, crumble up your bread slices and toast them. You can cook them in the oven around 400 degrees F or in a toaster. Set aside for topping.
  • Add the jar cheese sauce (or Velveeta & milk) to the drained macaroni.
  • Stir in cooked, chopped chicken that is warm. You can just microwave pre-cooked chicken to get it warm.
  • Add in the buffalo sauce and stir. If you want it to be spicy, you will need to add a lot.
  • Top with bread crumbs, bleu cheese crumbles, and green onions. You can add other toppings if you choose such as fresh, diced tomatoes or bacon crumbles.

Notes

  • 2 jars of Ragu cheddar cheese sauce is equivalent to 1 pound of Velveeta block cheese and 2/3 cup of milk.
  • To make this dish vegetarian, you can leave out the chicken.
