This buffalo chicken mac and cheese is a fun twist on traditional macaroni and cheese. You can make it really spicy or keep it mild.

Ingredients
16ounceselbow macaroni
1poundcooked chicken(chopped)
2slicesbreadOR croutons
2jarsRagu Cheddar Cheese SauceOR 1 lb. of Velveeta block cheese + 2/3 cup of milk
bleu cheese crumbles
green onions(chopped)
1/4cupbuffalo hot sauce(or more for a spicier dish)
Instructions
Boil water and cook macaroni according to the box, and then drain the water.
While the macaroni is cooking, crumble up your bread slices and toast them. You can cook them in the oven around 400 degrees F or in a toaster. Set aside for topping.
Add the jar cheese sauce (or Velveeta & milk) to the drained macaroni.
Stir in cooked, chopped chicken that is warm. You can just microwave pre-cooked chicken to get it warm.
Add in the buffalo sauce and stir. If you want it to be spicy, you will need to add a lot.
Top with bread crumbs, bleu cheese crumbles, and green onions. You can add other toppings if you choose such as fresh, diced tomatoes or bacon crumbles.
Notes
2 jars of Ragu cheddar cheese sauce is equivalent to 1 pound of Velveeta block cheese and 2/3 cup of milk.
To make this dish vegetarian, you can leave out the chicken.
