Buffalo Chicken Mac and Cheese Recipe

This buffalo chicken mac and cheese is a fun twist on traditional macaroni and cheese. You can make it really spicy or keep it mild.

Ingredients

  • 16 ounces elbow macaroni
  • 1 pound cooked chicken (chopped)
  • 2 slices bread OR croutons
  • 2 jars Ragu Cheddar Cheese Sauce OR 1 lb. of Velveeta block cheese + 2/3 cup of milk
  • bleu cheese crumbles
  • green onions (chopped)
  • 1/4 cup buffalo hot sauce (or more for a spicier dish)

Instructions

  • Boil water and cook macaroni according to the box, and then drain the water.
  • While the macaroni is cooking, crumble up your bread slices and toast them. You can cook them in the oven around 400 degrees F or in a toaster. Set aside for topping.
  • Add the jar cheese sauce (or Velveeta & milk) to the drained macaroni.
  • Stir in cooked, chopped chicken that is warm. You can just microwave pre-cooked chicken to get it warm.
  • Add in the buffalo sauce and stir. If you want it to be spicy, you will need to add a lot.
  • Top with bread crumbs, bleu cheese crumbles, and green onions. You can add other toppings if you choose such as fresh, diced tomatoes or bacon crumbles.

Notes

  • 2 jars of Ragu cheddar cheese sauce is equivalent to 1 pound of Velveeta block cheese and 2/3 cup of milk.
  • To make this dish vegetarian, you can leave out the chicken.
