When you have a busy family, it is nice to find easy dinner recipes that you can make in less than a half hour. Fish tacos are super easy, and both the fish tacos and the mango salsa only have a few ingredients. It doesn’t take long to whip up these fish tacos and mango salsa!
I had tried fish tacos at restaurants before, but I never liked any of them that much. They were just okay. I decided to try to make my own with ingredients that I love.
What I love about this recipe is that it has a combination of great textures and flavors. The fish sticks are crunchy, but the mango salsa is juicy.

Quick & Easy Fish Tacos with Mango Salsa
Cooking the Fish
One of the things that makes this recipe so easy is that you can just use frozen fish sticks for the fish part of the taco.
I just preheat the oven according to the directions on the package. The ones we usually use cook at 425ºF.
The fish sticks that I typically buy are Gorton’s. For 4 servings, you only need about half a bag of fish sticks (2 sticks per taco). You could definitely make more if you would like.
I just bake mine in a small pan. You could use a cookie sheet as well. Gorton’s fish sticks say to cook between 14-17 minutes. I like to cook them for 17 minutes because they get crunchier that way.
Making the Mango Salsa
While the fish is cooking, I make the mango salsa.
First, I peel the mango using a sharp knife.
Then I use my awesome mango corer to get rid of the mango pit.
You can buy one here for less than $15! What is awesome about this mango pit remover is that it comes with a base to keep the mango from moving when you remove the core. Plus, the sides of the base can be used to peel the mango as well!
Then I cut the mango into small pieces using the same sharp knife that I used to peel the mango. I place the pieces in a bowl.
Then, I chop up about 2 tablespoons of onion and add it to the bowl. You could use more if you like onions a lot.
Sprinkle crushed red pepper over mixture. You can add more or less depending on how spicy you want it to be.
Squirt lime juice over mixture. You can use freshly squeezed lime juice if you want, but I just use the kind that comes in a bottle.
Then tear up pieces of cilantro and add to mixture. I think I use about 2 tablespoons worth once it is torn up. You can add as much as you like, but I LOVE cilantro!
Mix everything together.
Finishing Up the Fish Tacos with Mango Salsa
After I finish making the mango salsa, I heat up the tortillas in my microwave. I use a tortilla container like this to heat the tortillas in and keep them warm.
I love using street taco sliders for fish tacos because they are the perfect size. They are smaller than a normal tortilla, so I usually eat 3 of them.
Then, I get the fish sticks out of the oven once they have cooked.
I put 2 fish sticks per tortilla and then I top it with mango salsa.
You can also add other toppings such as shredded cheese, shredded coleslaw mix, or sweet chili sauce.
Then you can eat them!
