Easy Potato Skillet Dinner RecipeIf you’re like me, then you like dinner recipes that are easy to make and don’t require a ton of ingredients. This skillet recipe is pretty flexible as far as the ingredients go. You can add more ingredients than the ones I’ve listed, and you can substitute ingredients for things that you like best. One of the great things about this recipe is that you can easily turn it into a vegetarian dish if you would like.

I got the idea to make a skillet recipe after eating a lot of the skillet dishes at Denny’s Restaurant. It’s a nice dish for my family to eat because everyone likes it!

Potato Skillet Ingredients

1 pound cooked diced chicken*

3 small pre-cooked potatoes diced into 1” cubes (I usually cook potatoes the day before or earlier in the day)

1 pack of fresh stir fry vegetables

1 red pepper (chopped)

½ onion (chopped)

1 cup shredded pepper jack cheese

1—1 ½ cups sugar-free teriyaki sauce (I like this one)

2 tablespoons olive oil

 

*You can use pre-cooked diced chicken from the frozen section to save time.

 

Other variations:

A lot of things can be changed around in this recipe. You can use different stir fry vegetables. The ones I like the best have carrots, lots of green leafy vegetables, broccoli, and pea pods. You can leave out the pepper or onion. The sauce I use is sugar-free, but you could use a different sauce if you don’t care. The cheese could also be changed. I have tried many variations and they have all been good.

 

Potato Skillet Directions

 

Step 1: Cook Vegetables

Heat oil in a large skillet. Add the onion, pepper, and stir fry veggies. Cook until softer.

 

Step 2: Add Chicken & Potatoes

Since the chicken and potatoes are pre-cooked, you wait to add these until the vegetables are already soft. You will then cook all the veggies and chicken for 5 minutes.

 

Step 3: Add Sauce

You can add the whole bottle or less depending on how saucy you would like it. I usually use most of the bottle of sauce. Cook the skillet meal for another 1-2 minutes.

 

Step 4: Add Cheese

Put the cheese on top of the skillet and cook until it melts.

 

Step 5: Serve

This recipe makes about six servings.

Instructions
